Home Fries ========== - 1.5 lb Yukon gold potato unpeeled (3-4 red potato ok too), cut into 3/4" cubes - 5 tbsp veg oil - salt / pepper - 1/4 onion, chopped fine - 1 garlic clove, minced - Optional: 1 tbsp chopped rosemary 1) Mix potato, 1 tbsp oil, 1/2 tsp salt, rosemary + 1/4 tsp pepper in microwave safe bowl. 2) Cover + microwave 7-10 min to soften. Stir occasionally. Drain well 3) Heat 12" cast iron skillet over medium heat for 3 min. Add 2 tbsp oil and heat until shimmering. Add onion and cook until soften and lightly brown. 4) Stir in garlic and cook until fragrant (30 sec) + transfer to a bowl 5) Heat remaining 2 tbsp oil in empty skillet over medium heat until shimmering. Add potato and gently pack into skillet using back of spatula. Cook without moving until potatos begin to brown, 5-7 min. 6) Flip potatos one portion at a time + lightly repack into skillet. Repeat flipping process every few minutes until tender, browned and crisp (about 12-16 min) 7) Stir in onion mixture. Season with salt and pepper to taste + serve.
